To cook the isomalt, it is recommended to add 1/4 cup of distilled water for every cup of crystals. It is advised to make a batch of at least 2 cups or more for better results. The crystals and distilled water should be added to a medium-sized, heavy-bottomed saucepan and heated on medium-high heat. Once the crystals are melted and at a rolling boil, the heat should be reduced and a candy thermometer should be used to monitor the temperature. The isomalt should be cooked at medium-low heat until it reaches 360 degrees, ensuring that it doesn't burn. Adding coloring or flavoring can be done when remelting the cooked isomalt in the microwave. It is important to let the isomalt sit for a few minutes after removing it from the heat to allow the bubbles to dissipate. Any remaining bubbles on the surface can be removed using a kitchen butane burner or torch.
